Also known as the "diamond of the kitchen", truffles are a rare and delicious form of mushroom with a pungent aroma and a distinctly earthy taste. They are difficult to grow, hard to find in the wild, and are in decline due to habitat loss and high demand. They are extracted from soils near the roots of broadleaved trees such as oak or hazelnut with the help of domestic pigs called "truffle hogs." Over the last few years, however, hogs have been replaced by specially trained dogs since the hogs have the tendency to eat them as they dig. Hogs are much smarter than they look!
